WINTER SOUP: CREAM OF MUSHROOMS

I feel like we are in between holidays and we don't know what day is it, or what are we supposed to be doing. I am in the situation where my mind wants vacations, and my body is finding a way to wake up and get stuff done, the struggle is real. This happens with food too. Maybe it is because is weird for me to still have a routine when everything around me screams holiday break, but I am the laziest person when I get home. I am still mindful about what I am eating, so I don't want to eat just to eat and have dinner. 

Mindful eating is not only eating healthy, but being aware of what you are eating, and what you are doing.

Because we are touching base on this, it is important to understand the difference between eating healthy, and eating mindfully. Sometimes we eat healthy but we are not being mindful about eating, and those cases are when we don't see results in our diets, or we are not satisfied with what we are eating and we want more. If we are mindful eaters, we will make healthier choices and our relationship with food will change.

Dinners for me mean cozy, intimate, romantic, even if its just me. Dinners are your last meal of the day, when you get home from a long day and you get to seat and enjoy your favorite tv show, or a movie, or catch up with bae about what you were up to. I always want to eat something that is heartwarming, and nice. SO! Aside from this soup being one of my top favorites, it is super easy to make, and is winter time here in California so winters call for soups (I know we don't have real winters here, but it still gets cold sometimes).

Here the recipe!

Mushrooms
Onion
Green onions
2 tbs of corn starch
1 cup of half and half
Butter
Salt and Pepper to taste

Cut the mushrooms into slices, and chop the onions and green onions. In a pot pan melt the butter and sauté the onions until golden. Add the green onions and the mushroom slices and mix together for about 2 minutes. In a bowl, add about a cup of water and mix the corn starch. When mixed, pour it over the mushrooms and onions. Add salt and pepper. The corn starch will thicken the soup, making it a cream. Stir constantly. When you notice the mix is starting to thicken, add the cup of half and half, and stir until everything is well combined. Wait until it boils.

You can serve it with parsley on top, or chopped green onions.
