Fresh Monday: Fastest Lunch Idea Ever

Although I love to cook, sometimes I get extremely lazy when it comes to think about what to eat. I try to make my meals ahead of time because its easier, and saves me a lot of time during the day. I am a creature of habit, when I like something I can eat it nonstop. But! even so, I get tired of eating the same thing over and over again, don't you??

I find myself looking for ideas that would make my life easy. But there are so many options and so many ways to make the same meal that I feel like if I am wasting all the potential the food has if I make it the same way all the time. 

Can you tell how much I love food?

This feeling goes back to when I was growing up. The way my grandma would make the simplest thing taste so amazing was heartwarming. It was an overwhelming mixture of flavors that would make that moment the happiest moment of your day.

So! I learned through delicious smells and flavors that you can make magic out of the simplest meal, and you don't need much.

One of the things that caught my eye were bowls. 

So, bowls are the easiest way to eat everything and still make it cute, because its a bowl. You literally put all the food in there and for some crazy reason it will still look good. You can prep your meals ahead of time, and spice it up by making a bowl. For this one in particular, I had prepared the chicken in the oven and had it ready. It is the easiest lunch/dinner e-v-e-r. Its healthy, full of greens, protein and fiber.

For this recipe you will need:

chicken breasts

broccoli florets 

haricots verts

brown rice 

cumin

parsley

garlic powder

pink salt

olive oil

Here is how I made it:

I had made the chicken ahead of time. I sliced the chicken breasts to make them thinner, added pink salt, cumin, little bit of garlic powder, parsley and olive oil. Baked the chicken for 20 minutes at 300F.

The rice then, I added half a cup of brown rice with two of water (you want to add more water to the brown rice because the grain is different and it takes longer to soften), added pink salt, parsley (I love parsley) and less than a tea spoon of olive oil. When the rice is almost done, you add the broccoli florets and the haricots verts. These cook super fast, so adding them to the rice at the end allows every ingredient to be ready at their own time. Lastly, I added the chicken. You can wait until the rice is done to add it as the chicken was made in advance. Mix everything together and let it set for about 10 minutes. This way all the ingredients will blend together and loose all their flavors. And thats it!

You can avoid the chicken and made it vegan instead. The flavors were amazing. Super easy, healthy and tasty recipe for when you don't feel like thinking too much! I will link my favorite bowls and linens to make your dish look extra cute!
