5 DAYS OF CHRISTMAS. LAST MINUTE DESSERT: COCONUT POT DE CREME

Sometimes we have this crazy idea of hosting-holiday-dinners. It happens when we are blinded by the holidays' bliss and we really don't know what are we getting into. I personally love hosting things (haha), but I tend to freak out last minute trying to make everything perfect. If you are like me in any way, you like to work the least possible, and still make something delicious and cute. 

So this recipe was sent from heaven because is easy, fast and taste next level of amazing.

I am a fan of flans, creme brûlée, pot de creme, panna cottas, you get it. My family's recipe for eggnog has flan, so we would literally make two boxes of flan, one to eat it, and the other for the eggnog. There is another dessert for the holidays that is made with coconut milk and papelon that has the same flan-like consistency, and other that is made with cornstarch and you add papaya jam, or plantain jam on top. Next-level, I am telling you, and all have the same kind of consistency. But, aside from requiring a considerable amount of time to make, and having my mom that makes them a thousand times better than me, I wanted to make something different. So, this lazy-easy breeze-holiday inspired-dessert that is surprisingly good can be added to your list of desserts because you will surprise everyone, believe me. (Even I was surprised)

Here the ingredients to make around 8:

1 can of coconut milk
10-12 dates, pitted
1 egg
1 tbs of rum (brandy works too, and I mean, why not? One of the magic things of the holidays is that everything has alcohol in it, or is it only in my family?)
1/4 cup of cocoa butter, or coconut oil
1 tsp of vanilla


Soften the dates in hot water. Warm up the coconut mil, but don't let it boil. In a high speed blender mix all the ingredients but the milk. Once everything is well mixed, in low speed, pour the coconut milk slowly to the mixture while it blends. I used my NutriBullet and for this last step I had to do it manually with a whisk because I don't have the blender-type vase for it. It wasn't hard at all, but if you have a blender, or a Vitamix, it will be easier. When everything is blended together, pour the creme in cups and refrigerate them for at least two hours. Serve with whipping cream or ice cream.

Tip: adding fruit is always a good idea, so I added black berries because the combination is bomb so why not.
