Last Minute Thanksgiving Pumpkin Soup

This is the best recipe for the ones who aren't fans of the kitchen. Thanksgiving can be overwhelming, specially if you have to cook. Aside from the typical thanksgiving meals, this soup is the perfect complement to your dinner. If you are hosting, or just feel the need to contribute with something and have no idea what, try this quick and easy recipe that everyone will love. 

You will need:

  • One onion
  • One shallot
  • 1 tbs of butter
  • 1 sweet pepper
  • 1 bell pepper
  • Green onions
  • Half a pumpkin, or one small pumpkin
  • One yellow potato
  • Heavy cream (or coconut cream if you want to make it dairy free)
  • salt and pepper

How to:

Cut the veggies in small cubes. In a pan sauté the onion, shallot and butter until golden, add the peppers and green onions to the mix. When golden, add the pumpkin and potato cubes, mix with the veggies and the butter, and add water until barely covering the pumpkin and potato cubes. Add salt and pepper. Let it boil and remove when the potato and the pumpkin are ready (when soft). It takes about 15 to 20 minutes. When ready, its time to blend everything together. I recommend to avoid adding all the water from the pan so the soup is creamy. Blend, blend and blend! Serve in bowls and add a tsp of the cream of your preference in the center and decor with parsley.
