Make it: Creamy Garlic Butter Salmon
I love when I get to cook something for dinner, something cozy and intimate. As much as I like to go and try out new restaurants, there is a je ne sais quoi about making something nice and delicious. I've been loving fish lately, more than any other protein. I've been experimenting with different flavors to spice things up. One of my faves is salmon, its super easy to cook, and tastes good on its own.
There are countless benefits of it. Rich in Omega-3 fatty acids, great source of protein, high in vitamin B, protects brain health and helps with inflammation. It is also one of the most versatile fish out there, and it digests super fast.
This recipe is for two fillets, and you will need:
2 Salmon fillets, skin off (you can use any white fish)
Salt and pepper to taste
1/4 cup Parmesan Cheese
1/4 cup of white wine
1 1/2 cups of Half and Half (you could remove it if you rather less dairy
3 garlic cloves, finely diced
Half a yellow onion, finely diced
2 tbs of olive oil
1 tbs of butter
2 cups of baby spinach
1 tbs of chopped parsley
Pour the olive oil in a skillet over medium-high heat. Season the fillets with salt and pepper, and sear them on the heated skillet, around 5 minutes each side. Take them out of the heat, and add over the butter and garlic to the pan. Once the garlic has some aroma, add the onions and sauté until golden. Proceed to pour in the white wine and the half and half. Lower the heat to medium-low and wait until it reduces, around two minutes. Place the baby spinach and combine them with the sauce. Finally, add the salmon fillets back along the parsley and parmesan cheese. Wait until the cheese has melted and that's it!
Pair it with quinoa, greens, or steamed veggies.
*for non-dairy option just remove the parmesan cheese and the cream*
This is a great idea for a romantic dinner, if you want to impress your invitees or just for you when you are feeling like treating yourself.
