Cravings: Cacio e Pepe, better known as Mac and Cheese
I've been craving mac and cheese for the longest time to the extent that I thought of buying the boxed version at the supermarket. I don't like those, and I've tried countless times to make Mac and Cheese myself unsuccessfully that I almost gave up.
And then this recipe was sent out from heaven.
Mac and cheese with pepper is basically what it is. It's tasty, simple and made my stomach very very happy. Takes around 10 minutes the whole thing, and the best part is that you can feed an entire football team with it. Everyone will love it.
So here is the recipe:
- 1 tbs of peppercorns
- 1 cup of half and half
- 2 cups of almond milk (I promise you will barely taste it!)
- 1 cup of white cheddar cheese
- 1 cup of mozzarella cheese
- 1 cup of parmesan cheese
- Butter
- Olive oil
- Salt
Cook the pasta until al dente (mine took 11 minutes). Drain and add olive oil so the pasta doesn't stick together. In the meantime! Toast the peppercorns about 1 minute in a pan, then add the butter until it melts. Add the two cups of almond milk, and the cup of half and half and wait until it simmers, about 5 minutes. Bring down the temperature to medium-low, add the cheeses and salt if needed. Once melted, pour the pasta and mix together. And see the magic happens, all melted cheesy deliciousness.
