Double Chocolate Banana Bread

Something I’ve done more during this time at home is experimenting in the kitchen. This recipe is the result of not having enough flour, and oh boy, what a beautiful mistake. I’ve made it twice in the last couple of weeks, and it’s perfect for breakfast, dessert, after dinner bite, afternoon sweetness, whatever you want.

Recipe is super simple! It’s soft and fluffy and chocolaty and delicious.

You’ll need:

  • 4 ripped bananas

  • 1/2 cup coconut oil or unsalted butter, melted 

  • 3/4 cup coconut sugar or white sugar, whatever you have available

  • 1 large egg

  • 1 cup oat flour (if you have oats instead, grind them in your blender or food processor and you get oat flour), or all-purpose flour. Almond and coconut flour would work too.

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt (if you used salted butter, skip this step)

  • 1/2 cup cocoa powder

  • 1 cup semi-sweet chocolate chips

  • 1 cup chopped walnuts

INSTRUCTIONS

  • Preheat oven to 350°F

  • Combine in a bowl the coconut oil or butter with the sugar. Add the egg and the bananas. Mix everything up

  • Add the flour, cocoa powder, baking soda and salt and mix until combined. Add the chocolate chips and walnuts and give it all a quick stir. 

  • Pour into an greased loaf pan and bake for 55 to 65 minutes. Let cool for at least 30 minutes.

Super easy, best way to use your ripped bananas. You will LOVE this recipe.
