Fresh Monday: OMG French Toast!

My mom always would decorate our food so we would be really excited to eat it. She would buy cute plates, and make hearts and smiley faces to our food. In general, one of the things that my mom taught me was "presentation is key", and I got used to serve my food with cute details and nice looking, to make heart shaped pancakes, or to write a cute note with honey on the oatmeal (so guys, its not only for the blog).

I have to be completely honest and confess that I get extra excited for cheesy days like Valentine's day for the simple reason of having a excuse to make a pretty breakfast. 

I'll show my love through my food, take it or leave it.

Breakfast has my heart from all of the other meals during the day. Having a good satisfying breakfast sets the tone and my mood for the rest of the day. Benefits of eating breakfast? Tons! Serves as an energy boost, helps to sharp your focus, improve your mood (

As I decided to reduce considerably my intake of dairy because I've always had issues with it

(minus cheese, I still can't say no)

, I switched up the recipe to meet my goals (sugar-free, dairy-free, low-cal, goodness, goodness and more healthy goodness).

So get ready, because this actually doesn't suck!

For the french toasts you will need:

2 slices of whole seed bread

Cinnamon

Vanilla

Some kind of sweetener (I used stevia)

1 egg

Around 1/4 of almond milk (I used

this one

, but you can change it for

coconut milk

, or low-fat milk) 

Heart shaped cookie cutter (

make it cute!

)

For the 5 minute syrup

Raspberries

Blueberries

Cinnamon

1 tbs of chia seeds

Honey (or Agave)

Prep:

Place all the ingredients in a bowl and smash them, It literally takes less than five minutes, and its amazing!

Mix all the ingredients of the french toasts in a bowl. Cut the bread slices with the cookie cutter and dip it in the mix. In a preheated pan spray canola oil (zero calories and no salt added), and place the bread slices with the mixture. I left them for around a minute each side, and done! Top them with the syrup and the breakfast is ready to serve!
